Should you pull just the bloom itself off, or do you take off the little piece of stem also? Or does it matter?

If you don't want them to be leggy, cut back some of the stem also. They will usually bush at that point. You can try both ways to see how they look, to see what you like better. I'm not an expert, but I've done both in the past and they looked pretty good when I cut some of the stem. They got really leggy if I just did the bloom.
